A hypothesis is a prediction of the outcome of an experiment. It is not a statement of your opinion on how the experiment will turn out. With paper towels, you might look at the towels and think they will be different from each other or that one particular brand looks especially likely to absorb a liquid. With the null hypothesis, you are covering yourself in case there are paper towels out in the world that you didn't test that would disprove the 'Viva will be the best' or 'some towels are better than others' hypothesis (maybe all towels are the same except the ones you tested).
